Ingredients for Chicken Dum Biryani
For Marination:
- Chicken legs - 1 kg
- Curd (whisked) - 2 cups
- Ginger garlic paste - 2 tbsp
- Turmeric powder - 1 tsp
- Red chili powder - 1 tbsp
- Garam masala powder - 1 tbsp
- Biryani masala - 2-3 tbsp
- Salt - to taste
- Chopped coriander - 1/2 cup
- Chopped mint - 1/2 cup
For Barista (Fried Onions):
- Medium onions - 5-6
- Oil - 1/2 cup
Other Ingredients:
- Rice - 1 cup
- Chopped coriander - 1/2 cup
- Chopped mint - 1/2 cup
- Kesar (saffron) soaked in water
- Green cardamom - 4-5
- Cloves - 3-4
- Black cardamom - 1
- Ghee - 3-4 tbsp
Step-by-Step Recipe for Chicken Dum Biryani
1. Marination:
Begin by marinating the chicken. Combine the chicken legs with curd, ginger garlic paste, turmeric powder, red chili powder, garam masala, biryani masala, salt, chopped coriander, and chopped mint. Mix well and let it sit for 1-2 hours to allow the flavors to meld.
2. Preparing the Barista:
Slice the onions thinly and fry them in oil until they turn golden brown. This process will create the crispy, caramelized onions known as barista. To keep the barista crispy, sprinkle a little rice flour over them once they're done. Set aside.
3. Cooking the Rice:
Boil water in a separate pan and add the dry spices, including green cardamom, cloves, and black cardamom. Once the water is boiling, add the soaked rice (soak the rice for no more than 30 minutes prior). Add salt to taste and cook the rice until it is 60% done. Strain the rice and rinse it under cold water to stop the cooking process.
4. Assembling the Biryani:
In a heavy-bottomed pan, add 2 tbsp of the oil left from frying the barista. Layer the marinated chicken at the bottom, followed by a layer of fried onions, then a layer of partially cooked rice. Sprinkle chopped coriander and mint over the rice, and drizzle with ghee. Repeat the layering process.
5. Cooking the Biryani:
Pour a tbsp of the saffron water over the top layer. Cover the pan tightly and cook on medium-low flame for 30 minutes. Afterward, transfer the pan to a heated tawa and cook for another 15 minutes on low flame to ensure the rice and chicken are fully cooked and infused with flavor.
6. Resting the Biryani:
Once done, turn off the flame and let the biryani rest for a few minutes before serving. This resting period helps the flavors to fully develop and blend together.
