As the chilly winds of winter set in, our bodies crave warmth and nourishment. Ingredients for Amlaprash

  • 500 gm amla (Indian gooseberry)
  • 4 green cardamoms (elaichi)
  • 1 black cardamom (badi elaichi)
  • 10 cloves
  • 1 star anise
  • 5 bay leaves
  • 1 tbsp black peppercorns
  • 1-inch cinnamon stick
  • ½ cup raisins (soaked in hot water)
  • 15 dates (deseeded and soaked in hot water)
  • 1 cup Tulsi (holy basil) leaves
  • 3 tbsp ghee
  • 1 cup jaggery
  • 15-20 saffron (kesar) strands

Method to Make Amlaprash

Step 1: Steam the amlas for 15-20 minutes until tender. Let them cool, deseed, and blend into a smooth paste.
Step 2: Dry roast the cinnamon, peppercorns, black cardamom, cloves, star anise, and bay leaves on low heat. Grind them into a smooth powder and set aside.
Step 3: Blend the soaked raisins, dates, Tulsi leaves, and a small amount of water to create a paste.
Step 4: In a pan, cook the amla paste on low heat for 4-5 minutes. Add the date and raisin paste, the ground spice mix, and saffron strands.
Step 5: Cook the mixture on low heat until it thickens and changes colour. Stir in ghee and jaggery, ensuring everything is well combined.
Step 6: Let the mixture cool. Garnish with silver vark and additional saffron strands for a festive touch. Store the amlaprash in an airtight container for up to six months.

How to Enjoy Amlaprash

Serve one tablespoon of this delicious preparation daily, either with warm milk or as is. The warming spices and nourishing ingredients make it an excellent winter companion to keep colds and flu at bay.
