Ingredients:

  • 200g Besan (Gram flour)
  • 45g Sooji (Semolina)
  • 40g Methi (Fenugreek leaves)
  • 5-6 Hari mirch (Green chillies)
  • 1-inch Adhrak (Ginger)
  • 1 tsp Lal mirch (Red chilli powder)
  • 1/2 tsp Haldi (Turmeric powder)
  • 1 tsp Dhaniya powder (Coriander powder)
  • 1 tsp Kali mirch powder (Black pepper powder)
  • Salt to taste
  • 1/2 tsp Hing (Asafoetida)
  • 2 tsp Chini (Sugar)
  • 1 tsp Ajwain (Carom seeds)
  • 2 tsp Safed Til (White sesame seeds)
  • Fresh Coriander leaves (for garnish)
  • A pinch of Baking powder
  • 2 tsp Hot oil
  • Oil for frying

Method:

  • First mix besan (gram flour) with sooji (semolina), add the crushed ginger and green chilies, sesame seeds, sugar, ajwain, and dry spices which include red chili powder, turmeric, coriander powder, black pepper, and salt. Gradually add water to it so that the batter is not very watery but thick, and then mix freshly chopped fenugreek and coriander leaves.
  • Before frying, mix in a pinch of baking powder and hot oil for extra crispiness. To fry, use medium hot oil. Keep the hot oil in the pan, then drip spoonfuls of batter one after another so they fall into the oil from all directions and get cooked until they turn golden brown with crispness in the right direction.
  • Serve the hot methi gotas with a bowl of kadhi for a warm and filling breakfast that will keep you going all day.
