  • 250 grams paneer, cut into cubes

  • 1-2 onions, chopped
  • 1/3 cup cashews, soaked
  • 1/2 cup coriander leaves and stems
  • 1/2 cup hung curd
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin (jeera) powder
  • 1 teaspoon garam masala
  • 1 teaspoon rock salt
  • 1 teaspoon coriander powder
  • 2 teaspoons oil
  • 1 bay leaf
  • 1 inch cinnamon stick
  • 2-3 cloves
  • 1-2 green cardamoms
  • 1 teaspoon kasuri methi
  • Salt to taste

Instructions:

  • Marinate the Paneer: First, marinate the paneer cubes in ginger-garlic paste. Let the flavors soak in.
  • Prepare the green paste: In a pan, heat 1 tsp oil. Combine 1-2 tbsp ginger-garlic paste, 1-2 green chilies, 1-2 onions, 1/3 soaked cashews, and 1/2 coriander leaves and stems. Sauté the onions till golden brown. Let the mixture cool before grinding into a smooth paste.
  • Make the Yogurt Mixture: In a separate bowl, take 1/2 cup hung curd with 1 tsp turmeric powder, cumin powder, garam masala, rock salt, and coriander powder. Mix everything well.
  • Cook the Curry: In another pan, add 1 tsp oil, 1 bay leaf, 1 cinnamon stick, cloves, and 1-2 green cardamoms. Fry these whole spices until they release their aroma. Add the green paste and the spiced yogurt mixture. Mix everything well and add a little water to adjust consistency of the curry.
  • Final Touches: Adjust to taste with salt and kasuri methi. Let the curry boil for a few minutes, until it thickens and the paneer absorbs the creamy sauce.
