Ingredients

For the Paneer:

  • 1 cup paneer, cut into cubes
  • Oil, as required to pan fry

For the Masala:

  • 1 tbsp oil
  • 2 green cardamom
  • 1/2 inch cinnamon stick
  • 1 tbsp ginger garlic, finely chopped
  • 2 green chillies, chopped
  • 1 cup onions, thinly sliced
  • 1/4 cup walnuts
  • 1 small tomato, chopped
  • 1/2 cup mint leaves
  • 1/2 cup coriander leaves

Others:

  • 1 tsp oil
  • 1/2 tsp shahi jeera
  • 1 star anise
  • 1 black cardamom
  • 2-3 cloves
  • 1/2 tsp red chilli powder
  • 1/4 tsp turmeric powder
  • 1-1/2 tsp coriander powder
  • 1 tsp garam masala powder
  • Salt, to taste
  • 2-3 tbsp fresh cream (optional)
  • 1 tsp kasuri methi, crushed

Instructions for Hyderabadi Paneer

  • Heat oil in a pan.
  • Add paneer cubes and pan fry until they are golden brown on both sides.
  • Keep the fried paneer aside.
  • Heat 1 tsp oil in another pan.
  • Add the cardamom and cinnamon stick, and cook for a few seconds.
  • Add ginger, garlic, and green chillies. Cook for a few minutes.
  • Add onions and cook until they are lightly browned.
  • Add the walnuts, tomato, mint leaves, and coriander leaves. Cook for a few more minutes.
  • Once this mixture cools down, grind to a paste.
  • Heat 1 tsp oil in the same pan.
  • Add whole spices. Let them cook for a few seconds.
  • Add the ground masala paste and spice powders.
  • Cook until the masala leaves oil on the sides.
  • Once the masala is ready, add fresh cream if you like.
  • Add the pan-fried paneer cubes and crushed kasuri methi. Mix well.
  • Serve hot with Phulka, tandoori roti, naan, or even jeera rice, or matar pulao.
