Ingredients

  • Ragi flour - 1/2 cup
  • Oats powder - 1/2 cup
  • Jaggery powder - 1/2 cup
  • Oil - 1/4 cup
  • Curd - 1/2 cup
  • Milk - 1/4 cup
  • Cocoa powder - 2 Tbsp
  • Baking Soda - 1/2 Tsp
  • Baking Powder - 1 Tsp
  • Salt - 1/4th Tsp
  • Vanilla - 1 Tsp
  • Seeds or nuts for garnish

Instructions

  • Prepare the oats: Start by finely grinding 1/2 cup of the oats.
  • Blend the wet ingredients: In a blender, combine oats with 1/2 cup jaggery, 1/4 cup oil and 1/2 cup yogurt (curd). Blend until smooth.
  • Mix the dry ingredients: In a bowl, add oats, 1/2 cup ragi flour, 2 tsp cocoa powder, 1 tsp baking powder, 1/2 tsp baking soda and a pinch of salt.
  • Combine the ingredients: Add the wet mixture to the dry ingredients. Add 1 tbsp of vanilla extract and 1/4 cup milk. Mix until you get a smooth paste.
  • Prepare to cook: Place a large pan on the stove and take an empty stand. Cover the pan with a plate and heat for 10 minutes.
  • Pour the smaller cups: Add the paste into mini cupcake molds, filling each one about halfway. Garnish with seeds or berries of your choice.
  • Bake the cake: Place the filled cake molds in a pan on a stand. Cover and cook on low heat for 20-25 minutes.
  • Serve: Now, the oats ragi flour mini cake is ready. You can serve it.
