Fluffy Egg & Mushroom Omelette

Ingredients:

For Sautéed Mushrooms:

  • 1 tbsp butter
  • 2 tsp chopped garlic
  • 1 cup sliced oyster or button mushrooms
  • Salt to taste
  • Crushed black pepper to taste
  • 1 tsp chopped parsley or coriander

For Omelette:

  • 4 eggs
  • 2 tsp butter & 1 tsp oil
  • 1 tsp oregano seasoning
  • Salt to taste
  • Pepper to taste
  • 1 chopped green chili
  • 1/4 cup grated cheese

Fluffy Egg & Mushroom Omelette Preparation

For Sautéed Mushrooms:

  • Heat the Butter: In a non-stick skillet, melt 1 tablespoon of butter over medium heat.
  • Add Garlic: Add 2 teaspoons of chopped garlic and sauté until fragrant.
  • Cook the Mushrooms: Add 1 cup of sliced oyster or button mushrooms to the skillet. Season with salt and crushed black pepper to taste.
  • Sauté Until Golden: Cook the mushrooms until they are golden brown and cooked through.
  • Add Herbs: Sprinkle 1 teaspoon of chopped parsley or coriander over the cooked mushrooms. Set aside.

For Omelette:

  • Whip the Eggs: Crack 4 eggs into a mixing bowl. Use an electric beater to whip the eggs until they are fluffy.
  • Prepare the Skillet: Heat a non-stick skillet over medium heat with 2 teaspoons of butter and 1 teaspoon of oil.
  • Cook the Eggs: Pour the whipped eggs into the skillet, spreading them evenly. Season with salt, pepper, and oregano seasoning.
  • Add the Fillings: As the eggs start to set around the edges, sprinkle the sautéed mushrooms evenly over one half of the omelette. Add 1 chopped green chili and 1/4 cup of grated cheese over the mushrooms.
  • Fold the Omelette: Carefully fold the other half of the omelette over the filling to create a half-moon shape. Cook for 15 to 20 seconds, then flip it over. Cover and cook for another 15 seconds on very low heat.
  • Serve: Slide the omelette onto a plate and serve hot.
