- Dry roast these spices and grind them into a fine powder.

- 1 black cardamom
- 2 long cloves
- A small piece of cinnamon (patta)
- 1 fresh bay leaf (or dry if unavailable)

- 2 large onions or 3 small onions (sliced)
- 3 green chilies (adjust to taste)
- 4 stems of curry leaves
- 1 tablespoon chopped coriander
- 1 drop of lemon juice (optional)
Method: Step-by-Step Cooking Instructions
- Prepare the Chicken: Wash the chicken pieces thoroughly and strain to remove excess water. Marinate the chicken with salt, turmeric, and ginger garlic paste. Let it sit for 15-20 minutes.
- Dry Roast and Grind Spices: Dry roast the cardamom, cloves, pepper, cumin seeds, nutmeg flowers, nutmeg, coriander seeds, and poppy seeds. Grind these roasted spices into a fine powder and set aside.
- Fry the Initial Spices: In a large kadai, heat oil and add the black cardamom, long cloves, cinnamon, and bay leaf. Fry until aromatic.
- Cook the Onions: Add the sliced onions to the kadai and fry until they turn light brown.

- Add Chili Powders: Add Kashmiri chili powder and regular chili powder to the chicken. Mix well to ensure even coating.
