- 2 tbsp Chopped Garlic
- 2 Large Onions, Chopped
- 2-3 Green Chillies, Chopped
- 1 Big Piece Ginger, Chopped or Grated
- 1 Cup Fresh Curd (Yogurt)
- 1 tsp Kashmiri Red Chilli Powder
- 1 tsp Coriander Powder
- 1 tsp Cumin Powder
- Salt to Taste
Method To Prepare Haldi Ki Sabzi
- Preparation: Wash, peel, and grate the haldi (turmeric) and ginger. Ensure that the curd is at room temperature, then mix in the chili powder, cumin powder, and coriander powder, whisking until lump-free.
- Cooking the Base: Heat ghee in a pan, add cumin seeds, bay leaf, and cinnamon stick. Once they start to sizzle, add the chopped onions and garlic. Cook for 3-4 minutes until they are well cooked and slightly golden.
- Adding the Turmeric: Add the grated haldi (turmeric) and ginger to the pan. Cook on medium-low flame for about 15 minutes, ensuring that the turmeric is thoroughly cooked and no longer raw.
- Incorporating the Curd: Reduce the heat and slowly add the curd mixture to the pan, stirring continuously until it comes to a boil. Once boiling, add salt to taste and mix well.
- Final Cooking: Cover the pan and cook for an additional 8-9 minutes, allowing the flavors to meld together.
