Ingredients

  • 2 cups dahi (curd)
  • 1 tbsp red chili powder
  • 1 tbsp coriander powder
  • 1/2 tsp turmeric powder
  • 1 tsp black pepper powder
  • 1 tsp garam masala
  • 1 tsp cumin powder
  • 2 cups boiled black chickpeas
  • 3 onions (puréed)
  • 1 tbsp ginger garlic paste
  • 3 tbsp oil
  • 2 pinches asafoetida (hing)
  • 7-8 whole black pepper
  • 4-5 cloves
  • 1 dried red chili
  • 1 bay leaf
  • 1 black cardamom
  • 1 tsp cumin seeds
  • 1 green cardamom
  • 2 green chilies
  • 1/2 cup boiled and mashed chickpeas
  • Salt to taste
  • 1 tsp dried fenugreek (kasuri methi)
  • Fresh coriander leaves (hara dhaniya)

Method

  • Put all the curd in a bowl and add the red chili powder, turmeric powder, coriander powder, cumin powder, black pepper powder, and garam masala. Mix it well and put it aside.
  • Heat oil in a pan, then add asafoetida and whole spices (black pepper, cloves, dried red chili, bay leaf, black cardamom, and cumin seeds).
  • Add onion paste and fry till it turns brown. Then add ginger garlic paste and fry for some minutes.
  • Add green chilies and boiled and mashed black chickpeas. Mix everything well.
  • Add the curd mixture and stir constantly over low heat till it starts boiling. Once boiling, cover the pan and let it cook till the oil separates from the mixture.
  • Add water, salt, dried fenugreek, and remaining boiled black chickpeas. Let it simmer for about five more minutes. Finally, garnish with fresh coriander leaves.
  • Serve this delicious Pahadi kaala chana hot with rice or bread, and enjoy a delicious variation from the usual kaala chana sabji!
