Time to try Kuttu Frankie —a wholesome wrap filled with a spicy aloo patty, chutney, and onions, making it a delicious nutrient-packed street food alternative.

How to Make Kuttu Cheela (Buckwheat Crepe)?

Ingredients for Kuttu Crepe Batter:

  • 1 cup Kuttu atta (buckwheat flour)
  • ½ cup Singhara atta (water chestnut flour)
  • Salt to taste
  • Crushed black pepper to taste
  • ½ tsp roasted cumin (bhuna jeera) powder
  • 1 egg (or 50g dahi + ½ cup wheat flour for an eggless version)
  • 1.5 cups water

Steps to Prepare Kuttu Cheela:

  1. Mix Kuttu atta, Singhara atta, salt, pepper, and cumin powder in a bowl.
  2. Add egg (or yogurt and wheat flour for eggless option) for a smooth texture.
  3. Pour in water gradually while whisking to get a flowy batter consistency.
  4. Heat a non-stick pan and lightly grease it.
  5. Pour a thin layer of batter, spreading it evenly like a crepe.
  6. Cook until the edges lift slightly, then flip and cook the other side.
  7. Enjoy it as a crepe, roti, or stuffed wrap!

How to Make Kuttu Frankie (Buckwheat Wrap)?

For the Aloo Patty Filling:

  • ½ tbsp oil
  • ½ tsp cumin seeds (jeera)
  • 1 tbsp ginger-garlic paste
  • 1 green chili, chopped
  • ½ tsp turmeric powder (haldi)
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 4 boiled potatoes, mashed
  • 1 tbsp red chili sauce
  • 1 tbsp ketchup
  • Handful of fresh coriander, chopped
  • 2 tbsp corn flour

Steps to Prepare the Kuttu Frankie:

1. Heat oil in a pan and add jeera, ginger-garlic paste, and green chili.
2. Stir in haldi, red chili powder, and coriander powder, adding a splash of water to prevent burning.
3. Add mashed potatoes, mix well, then stir in red chili sauce, ketchup, and coriander.
4. Let the mixture cool, then add corn flour, mix, and shape into patties.
5. Pan-fry until golden brown and crispy (GBC – Golden, Brown, Crispy).
6. Take a prepared Kuttu cheela and place an aloo patty in the center.
7. Add chutney, sliced onions, Frankie masala, and a dash of chili vinegar for extra flavor.
8. Roll it up tightly and pan-sear for a crispy, golden finish.
