- 1/2 cup scrambled tofu

- 1 tablespoon grated ginger and garlic
- 2 Thai green chilies, crushed (adjust to your spice preference)
- 1 tsp garam masala
- 2 tbsp cumin-coriander powder
- 1 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (adjust to your spice preference)
- 1 tbsp crushed fennel seeds
- 1/2 tsp carom seeds
- 1/4 tsp Hing (asafoetida)
- 2 tbsp sesame seeds
- Salt to taste
- 1-2 tbsp sugar or jaggery powder
- 1/2 lime juice
- 1/4 tsp baking soda
- 2 tablespoons oil
For Tempering:
- 2 tbsp oil
- Pinch of Hing
- 1 tbsp cumin seeds
- Curry leaves
- 1 tbsp sesame seeds
- 1/2 tsp Kashmiri red chili powder
- Cilantro for garnish
Instructions for Making Gujarati Zucchini and Jowar Flour Muthiya
1. Preparing the Muthiya Dough
In a large mixing bowl, combine the grated zucchini (ensure excess water is squeezed out), semolina, jowar flour, scrambled tofu, chopped cilantro, grated ginger and garlic, crushed green chilies, cumin-coriander powder, turmeric powder, red chili powder, crushed fennel seeds, carom seeds, Hing, sesame seeds, and salt. Add sugar or jaggery powder and lime juice to the mixture.
2. Forming the Muthiya
Sprinkle baking soda into the mixture and combine well until it forms a dough-like consistency. If the mixture is too dry, add a bit of water. If it's too runny, add a little more flour. Grease your hands with a little oil and shape the mixture into cylindrical or oval-shaped muthiyas.
3. Steaming the Muthiya
Steam the shaped muthiyas in a steamer for about 15-20 minutes until they become firm. Let them cool slightly before slicing and set aside.
Tempering the Muthiya
1. Preparing the Tempering
In a separate pan, heat 2 tablespoons of oil. Add a pinch of Hing, cumin seeds, curry leaves, sesame seeds, and Kashmiri red chili powder.
2. Finishing the Dish
Pour the prepared muthiyas over the tempering and gently mix to coat them evenly. Garnish with fresh cilantro for an added burst of flavor.
