Ingredients:

  • 3 cloves garlic, minced
  • 1 small piece ginger, minced
  • 1 carrot, chopped
  • 1 red chili pepper, chopped (mildly spicy)
  • 1 yellow chili pepper, chopped (sweet variety)
  • Juice of ½ to 1 lemon (to taste)
  • A handful of fresh coriander leaves, chopped
  • Salt and pepper to taste
  • 1 teaspoon oil
  • 2 cups water
  • ½ teaspoon chili flakes (optional)

Method:

  • Finely chop the garlic, ginger, carrot, and two chili peppers. One might also add other veggies depending on personal preference.
  • Heat up 1 tablespoon of oil in a pot. Throw in garlic, ginger, carrots, and chili peppers, and stir-fry for just around a minute to heighten the flavor.
  • Add 2 cups of water to the pot and bring to a gentle boil. Cook the vegetables for about 5-7 minutes until soft.
  • Add salt and pepper according to personal preference.
