Ingredients and Instructions
For the Dhokla:
- 1 cup chana dal (yellow split chickpeas lentils)
- 1/4 cup water (for blending)
- 2 tbsp yogurt
- 1 tsp salt
- 1/2 tsp turmeric powder
- 1 tsp sugar (optional)
- 1 inch ginger, minced
- 2 green chilies, minced
- 2 tbsp oil
- 1 tsp fruit salt (eno)
- 2 tsp lemon juice
For the Stuffing:
- 1/2 cup peas
- 1/4 cup shredded fresh coconut
- 1 tbsp dried cranberries, finely chopped (or use raisins)
- 7 cashews, finely chopped
- 2 tbsp cilantro, minced
- 1/4 tsp salt
Instructions:
- Soak the chana dal for at least 3-4 hours or overnight. Drain and blend with 1/4 cup water into a coarse paste similar to idli batter consistency.
- Transfer the paste to a bowl, add yoghurt, and whisk vigorously for 4-5 minutes. Cover and let ferment overnight.
- Mix in salt, turmeric, sugar, ginger, green chillies, and oil. Adjust consistency with water if needed.
- Sprinkle eno on the batter and pour lime juice on top to activate. Mix well.
- For the stuffing, mix all ingredients together.
- Grease moulds with oil or ghee. Layer with dhokla batter, add a spoonful of stuffing, and top with another layer of batter. Steam for about 12 minutes.
- Serve warm
