Nidhi Bothra's Greek Delight: Crispy Tomato Fritters with Tzatziki

These crispy, golden fritters are filled with flavor and perfectly go with a homemade tzatziki dip as a great side to try this Thanksgiving. Nidhi Bothra, a food influencer, first had these last summer at a café in Santorini and fell in love with the recipe. In Greece, they call them tomatokeftedes, a must-have for everyone who enjoys fresh, lively flavors.
Ingredients
Tomato Fritters:
- 4 medium tomatoes (diced)
- 1/4 tsp salt (for the tomatoes)
- 1/2 cup shallots (onions) (finely chopped)
- 1/4 cup parsley (finely chopped)
- 15-20 sprig mint leaves (finely chopped)
- 1/4 cup green onions (finely chopped)
- salt (to taste)
- 1 tsp red chili flakes
- 1/2 tsp black pepper
- 1 cup all purpose flour
- 1 tsp baking powder
- oil, for frying
Tzatziki (Greek Yogurt Dip):
- 1 cup hung curd or greek yogurt
- 2 small english cucumbers (grated and lightly squeezed)
- 2-3 tbsp dill (finely chopped)
- 2 cloves garlic (minced)
- salt (to taste)
- 1/4 tsp black pepper
- 2 tsp lemon juice
- olive oil (for garnish)
- red chili powder (for garnish)
- dill (finely chopped for garnish)
Instructions:
- Combine the tomatoes and salt, then set aside in a bowl for ten to fifteen minutes. After that, drain your tomatoes, being careful to get rid of any extra water.
- In a bowl, combine the drained tomatoes, parsley, mint, green onion, salt, black pepper, red pepper flakes, all-purpose flour, and baking soda. The tomatoes' water helps in making a moist dough.
- In a pan over medium heat, add a few splashes of neutral oil. Drop your batter into the hot oil with a spoon or ice cream scoop, then flatten it into the shape of a patty. Additionally, to ensure that your patties are crispy, keep them fairly thin.
- After your fritters are fried, combine all the ingredients for a quick tzatziki yogurt dip and garnish with a few dill sprigs, olive oil, and red chili powder.
- Serve your Greek tomato fritters with tzatziki and garnish with green onions. Enjoy!
