Step-by-Step Instructions for Masala Stuffed Peppers
Caramelize the Onions: Heat oil in a pan and add sliced onions and sugar. Sauté over low to medium heat for about 10 minutes until the onions turn golden brown and release a sweet aroma. Be cautious not to overheat the pan to avoid burning.
Prepare the Filling: In a large bowl, mash together the boiled chickpeas and potatoes. Add the caramelized onions, cream cheese, yogurt, and all the spices (Italian seasoning, red chili powder, chaat masala, garam masala, cumin powder, dried mint, garlic powder, and salt). Mix in chopped cilantro for freshness.
Prepare the Peppers: Halve the sweet peppers and scoop out the seeds. Fill each pepper half generously with the prepared chickpea and potato mixture.
Top and Bake: Sprinkle the stuffed peppers with breadcrumbs and shredded cheese. Bake in a preheated oven at 350°F (180°C) for 10 minutes, or until the tops are golden brown and crispy.
Garnish and Serve: Once baked, garnish the peppers with chopped onions, green chutney, tamarind chutney, and a generous sprinkling of sev. Serve immediately and enjoy!
