Nepali Chukauni Recipe

Main Ingredients:

  • 2 boiled potatoes, cut into pieces
  • 1 whole red onion, sliced
  • 1 chopped chilli
  • Salt to taste
  • 1/2 - 1 tsp amchur
  • 1/2 tsp Kashmiri chilli powder
  • 1 cup plain yogurt
  • Water to adjust consistency
  • 1/3 cup fresh cilantro, chopped

For Tadka:

  • 1/8 tsp turmeric
  • 1.5 - 2 tbsp mustard oil, olive oil, or ghee
  • 1 tbsp kasuri methi
  • 1/2 tsp Kashmiri red chili powder
  • 1/4 tsp mustard seeds
  • 1 green chilli

Instructions

  • Prepare the Base: In a bowl, add plain yogurt/curd. Mix in the chilli powder, salt, and amchur.
  • Combine Ingredients: Add the diced boiled potatoes, chopped onions, green chillies, and chopped cilantro to the yogurt mixture.
  • Prepare the Tadka: Heat mustard oil, olive oil, or ghee in a pan. Add kasuri methi, turmeric, and Kashmiri red chili powder.
  • Mix Tadka: Pour the hot tadka over the yogurt mixture.
  • Optional: Squeeze a lemon over the mixture for added tanginess.
  • Serve: Serve the Nepali Chukauni with hot rice.
