Popular food influencer Nehal Karkera recently shared a recipe that is simply irresistible: Chivda Aloo ki Sabzi paired with Rajgira Puri. The flavors are so delicious that he cannot decide whether to share it with friends or keep it all for himself!

Ingredients

For the puri

  • 2 cup Rajgira atta
  • 1 tsp salt
  • 3 tbsp oil
  • Water as required
  • Oil for frying

For the Sabzi

  • 2 tbsp oil
  • 1 tsp jeera
  • 6-7 curry leaves
  • 1-2 chopped green chillies
  • 1/2 tsp chilli powder
  • 3 tbsp crushed toasted peanuts
  • 1-2 chopped tomatoes
  • 4 boiled potatoes (cut into chunks)
  • Pinch of Aamchur
  • Black salt to taste
  • 1 tbsp chopped coriander
  • 1/2 cup farali Chivda

Method

Making the Puri:

  • In a bowl, mix the Rajgira atta and salt. Add the oil and mix well.
  • Gradually add water to form a soft dough. Cover and let it rest for 5 minutes.
  • Take small portions of the dough and roll them into circles. Deep fry in hot oil until golden brown. Remove and set aside.

Preparing the Sabzi:

  • Boil the potatoes until soft, then cut them into chunks.
  • In a kadai (wok), heat oil and add cumin seeds, curry leaves, and green chilies. Sauté for a minute.
  • Add the chili powder and fry for another minute.
  • Mix in the chopped tomatoes and black salt. Cover and cook until the tomatoes soften.
  • Add the boiled potatoes and a little water. Cover again and cook on low heat for 2-3 minutes.
  • Finish by adding Aamchur, coriander, and the Chivda. Mix well and serve hot.

This crispy Rajgira Puri, served with Chivda Aloo ki Sabzi, is an ideal dinner for any celebration or event. It will be liked by anyone it is given to, whether they are friends or you.
