  • Salt and Haldi (turmeric) powder
  • 1 cup veggies (bottle gourd and carrots), grated
  • 2 to 3 tbsp chopped coriander
  • 1/4 cup Sooji (semolina)
  • 1/2 tsp Eno for each batch (Neha splits this batch into 2)

Soak the dals and rice for at least 4-5 hours or overnight. Blend them with chillies, ginger, and yoghurt to create a coarse batter. Mix in salt, haldi, veggies, coriander, and sooji. Let the batter ferment overnight. Before cooking, add Eno to the batter to make it light and fluffy.

Tadka Preparation

For the tadka, you'll need:

  • Oil
  • Mustard Seeds
  • Sesame Seeds
  • Curry leaves

Heat oil in a pan and add mustard seeds, sesame seeds, and curry leaves. Let them crackle and then add this tadka to the fermented batter for added flavour.

Cooking Handvo Bites

To cook the Handvo Bites, heat a Paniyaram Pan and pour the batter into each cavity. Cover and cook on low flame until the bites are light and fluffy. Flip them over to ensure they are crispy on both sides. Cook on low to medium flame for the best results.
