Chef Shruti Mahajan brings to you a healthy and easy dosa recipe using sabudana (tapioca pearls), aloo (potato), and sama rice (barnyard millet). It is packed with carbohydrates, protein, and fiber, making it a perfect meal for fasting days.
The protein-rich beetroot paneer stuffing makes this dosa stand out. Beetroot not only adds color to the dish, but it also boosts its nutritional content, and paneer completes the meal. Ingredients:
- ½ cup Sabudana (Tapioca Pearls)
- ½ cup Samak Rice (Barnyard Millet)
- 1 Boiled Potato
- ¼ cup Curd
- Water as required
- 1-2 Green Chillies
- 1-inch piece of Ginger
- Coriander (chopped)
- 1 tsp Cumin Powder
- ½ tsp Pepper
- Salt, to taste
- 200g Paneer
- 1 Grated Beetroot
Instructions:
- Dry roast sabudana and samak rice on a pan. Let them cool down.
- Blend them with boiled potato, curd, ginger, and green chilies to create a smooth batter.
- Add cumin powder, coriander, salt, and pepper. Mix well.
- Add water to make the batter slightly thin.
- For the filling, crumble paneer and mix it with grated beetroot, salt, and cumin powder.
- Heat a dosa tawa, mix the batter, and pour it into the pan.
- Cook on medium heat until golden brown, and then put in the filling.
- Fold the dosa and serve hot with Kheere ki Chutney.
