- 2 Green Chillies
- 1/2 inch Ginger
- 1/4-1/2 cup Water
- Additional Ingredients for Batter:
- 1/4 cup Sour Curd
- 1 tsp Kala Namak (Black Salt)
- 1 cup Water
- 1/4 tsp Turmeric Powder
- A pinch of Asafoetida (Hing)
- Salt, to taste
- 1 tsp Oil
- 2 cups Water
- 1 tsp Eno Fruit Salt
For Locho Chutney:
- 1 cup Coriander Leaves
- 8-10 Mint Leaves
- 2 Green Chillies
- 1/2 inch Ginger
- 1 tsp Jeera (Cumin Seeds)
- 1 tbsp Sugar
- 1 tbsp Lemon Juice
- Salt, to taste
- 1/4 cup Ghatiya or Roasted Chana Dal (Optional: replace with some Locho)
For Locho Masala:
- 1/2 tsp Pepper Powder
- 1/2 tsp Roasted Cumin Powder
- Salt, to taste
- 1/2 tsp Chaat Masala
- 1 tsp Red Chilli Powder
Step-by-Step Instructions
1. Prepare the Batter
To begin, grind the soaked chana dal, poha, green chillies, ginger, and water until a smooth paste forms. Transfer the paste to a bowl and mix in sour curd, kala namak, water, turmeric powder, hing, salt, oil, and eno fruit salt. The batter is now ready to steam!
2. Steam the Locho
Grease a plate or thali with edges and pour the prepared batter onto it. Place the batter in a steamer and allow it to steam for 7-9 minutes. Once done, serve the Locho immediately while hot for the best flavor and texture.
3. Prepare the Locho Chutney
In a blender, combine coriander leaves, mint leaves, green chillies, ginger, jeera, sugar, lemon juice, salt, and ghatiya or roasted chana dal (optional). Blend until smooth to create a delicious green chutney that pairs perfectly with the Locho.
4. Prepare the Locho Masala
Mix together pepper powder, roasted cumin powder, salt, chaat masala, and red chilli powder. This spicy masala adds an extra layer of flavor to your dish.
