Have you ever eaten Kantola ki Sabzi? Meghna, a food influencer, has recently shared the recipe for Kantola, also known as Kankoda in Gujarati. Kantola is a delightful vegetable available only for 2 months during the monsoon. Kantola is an excellent source of dietary fiber, vitamins, and minerals such as vitamin C, vitamin A, calcium, iron, & potassium.

Ingredients :

  • Spiny Gourd (Kantola, rinsed and cut into pieces)
  • 3 tbs Oil
  • Pinch of Asafoetida Powder (Hing)
  • Salt as per taste
  • 1/2 tsp Turmeric Powder (Haldi)
  • 1 tbs Coriander Powder (Dhaniya Powder)
  • Red Chilli Powder (as per taste)
  • 1/2 tsp Dry Mango Powder (Amchur Powder - optional)
  • Chopped Coriander

Instructions:

  • Rinse the Spiny Gourd (Kantola).
  • Cut them in half and then into vertical pieces.
  • Heat 3 tbs Oil in a pan.
  • Add a pinch of Asafoetida Powder (Hing).
  • Add the cut Kantola pieces to the pan.
  • Add Salt as per your taste.
  • Add 1/2 tsp of Turmeric Powder (Haldi).
  • Cover the pan with a lid.
  • Cook on a slow to medium flame for 7-8 minutes.
  • Add 1 tbs Coriander Powder (Dhaniya Powder).
  • Add Red Chilli Powder (as per your taste).
  • Add 1/2 tsp of Dry Mango Powder (Amchur Powder) for a tangy flavor.
  • Mix everything well.
  • Cover the lid again and cook for another 5 minutes.
  • Add some chopped Coriander for a fresh taste.
  • Turn off the heat and tranfer the Kantola Ki Sabzi to a serving plate.
  • You can enjoy this delicious sabzi with Roti, Paratha, Puri, or Rice.
