Ingredients You'll Need

  • 1 medium Chinese or regular cabbage
  • ½ cup salt
  • 2 carrots (julienned)
  • 2 spring onions
  • 2 tbsp rice flour
  • ¾ cup water
  • 1 tbsp soy sauce or fish sauce
  • 7–8 garlic cloves (grated)
  • 2” ginger (grated)
  • ¼ cup gochugaru or Kashmiri chili paste

Easy Step-by-Step Kimchi Method

  • Prep the Cabbage: Cut and generously salt the cabbage. Let it rest for 1–2 hours to soften.
  • Make the Paste: Cook rice flour in ½ cup water to form a thick paste. Let it cool. Blend with garlic, ginger, soy/fish sauce, spring onion bulbs, and chili paste.
  • Mix and Ferment: Rinse and drain cabbage. Combine with the spice paste, julienned carrots, and chopped spring onions. Mix well.
  • Pack & Store: Transfer to a clean jar, leaving room at the top. Ferment at room temperature for 2–3 days. Refrigerate and enjoy!
