Ingredients

For Filling

• 2 cups mushrooms
• 1/2 cup yellow bell pepper
• 1/2 cup green bell pepper
• 1/4 cup black olives
• 7-10 garlic, minced
• 2 tbsp butter

For Sauce

• 2-3 cups tomato puree (homemade)
• 1 tbsp chilli flakes
• 2 tbsp oregano
• 5-7 fresh basil leaves

For the Eggplant Layers:

• 1 large eggplant (thinly sliced)
• Salt (to release excess moisture)
• Oil (for cooking)

Step-By-Step Method to Prepare Special Eggplant Lasagna Recipe

• Prepare the Filling: In a pan add butter and then sauté all the veggies in butter along with garlic and salt.
• Make the Sauce: Make the Sauce: Stir in homemade tomato purée, chili flakes, oregano, and fresh basil leaves, then simmer until thickened.
• Prepare and Assemble Eggplant Layers: Thinly slice the eggplant and sprinkle salt to remove excess moisture. Cook it in oil until it turns soft and slightly mushy.
