Ingredients

Noodles:

  • 1 packet egg noodles
  • Water for boiling
  • 2 tsp salt
  • 1 tbsp oil

Sauces:

  • 2 tbsp dark soy sauce
  • 1 tbsp light soy sauce
  • 2 1/2 tbsp red chili sauce
  • 2 tbsp oyster sauce
  • 1 tbsp vinegar

Gravy:

  • 2 tbsp oil
  • 1 1/2 tbsp chopped garlic
  • 1 tbsp chopped ginger
  • 2 chopped green chilies
  • 250g cubed chicken breast
  • Salt to taste
  • 1/2 tsp white pepper powder
  • 1/4 cup baby corn
  • 1/4 cup carrots (par-boiled)
  • 1/2 cup cabbage
  • 1/2 cup mushrooms
  • 1/4 cup diced red and yellow peppers
  • 1/4 cup diced capsicum
  • 1/4 cup diced green beans

Prepared sauces

2 cups water
1 cup chopped bak choy
1 chicken seasoning cube
2-3 tbsp corn starch slurry

To Finish:

2 tbsp chopped coriander
3 tbsp chopped spring onions

Method

Step 1: Prepare the Noodles

  1. Boil water in a large pot with 2 tsp salt and 1 tbsp oil.
  2. Cook the egg noodles until al dente.
  3. Drain and rinse the noodles under cold water to stop the cooking process.

Step 2: Mix the Sauces

  1. Mix dark soy sauce, light soy sauce, red chili sauce, oyster sauce, and vinegar in a bowl.
  2. Set the sauce mixture aside.

Step 3: Cook the Gravy

  1. Heat 2 tbsp oil in a large pan or wok.
  2. Add chopped garlic, ginger, and green chilies, and sauté until fragrant.
  3. Add the cubed chicken breast, salt, and white pepper. Cook until the chicken turns pale.
  4. Stir in the baby corn, par-boiled carrots, cabbage, mushrooms, red and yellow peppers, capsicum, and green beans.
  5. Pour in the prepared sauces and 2 cups of water.
  6. Add the chicken seasoning cube and bring the mixture to a simmer.
  7. Add the chopped bak choy and cook for a few more minutes.
  8. Thicken the gravy with corn starch slurry, stirring constantly until desired consistency is achieved.
