- ½ tsp fenugreek seeds
- 2 tbsp coriander seed
- 1 tbsp kalonji

- 1 tsp cumin seeds

- 2 raw mangoes (chopped)
- 8–10 green chillies
- 6–7 garlic cloves
- Salt to taste
- 1 tsp turmeric powder
- 2 tsp Kashmiri red chilli powder
- ½ cup mustard oil (heated)
- ½ tsp hing (asafoetida)
Step-by-Step Instructions
- Roast & Grind Masala: Dry roast all the masala spices in a pan until fragrant. Let them cool and grind into a coarse powder. Set aside.
- Chop & Crush the Base: In a chopper, add the raw mango, green chillies, and garlic, and pulse until coarse.
- Mix the Magic: Transfer the mango mix into a bowl, add salt, turmeric, red chilli powder, and the ground masala. Mix well.
- Tempering for Depth: Heat mustard oil until smoking, add hing, and pour over the mixture. Stir thoroughly.
- Store & Serve: Store in a clean jar in the refrigerator. It's ready to serve instantly and gets even better the next day.
