My go-to breakfast is always something light, like idli or poha with coconut chutney. It's a bit unconventional for North India, where parathas rule breakfast, but I personally prefer something lighter to kickstart my day.

What's your favorite comfort food, and why does it bring you joy?

Rajma chawal is my usual comfort food, but as winter approaches, it's all about makke ki roti and sarson ka saag. It takes me back to childhood, especially with a dollop of ghee and a glass of lassi. The whole family sits together to enjoy it fresh, which makes the meal even more special.

What's the best meal you've had recently, and where did you have it?

I recently had the most amazing Muradabadi dal at a wedding. It was so authentic and full of flavor—one of those simple yet unforgettable dishes.

What's one food trend you're excited to try, and why?

Fusion food really excites me! I love it when Indian flavors are reimagined with modern techniques. I recently tried Punjabi chole hummus and paired it with kulcha instead of pita—it was such a fun twist. Another favorite was saag dip with makke ki roti nachos! One trend I'd love to explore more is elevating traditional Indian dishes into something modern and fine-dining worthy, without losing the essence of the original flavors.

What's your favorite snack to munch on while working or on-the-go?

Depends on my mood! It's usually roasted makhana, fruits, or cookies. They're my go-to snacks when I need a quick bite.

What's the most adventurous food you've ever tried, and would you recommend it?

Being vegetarian, my options are a bit limited when it comes to adventurous foods. During MasterChef, I saw people trying crocodile meat and red ants, but I passed on those! The most unusual thing I've had recently was tandoori lychee with a fusion Asian dipping sauce. While it had a meat-like texture, the flavor didn't quite hit the mark, so I wouldn't recommend it.

What's your favorite cuisine, and what dish do you always order?

North Indian cuisine is hands down my favorite. It feels like home. No matter what, I always come back to a slow-cooked dal makhani—done right, without overdoing the butter or the cream.

What's the one food you can't live without, and why is it a staple in your diet?

I can't live without simple, home-cooked meals. A balanced Punjabi thali with less oil and spices—like kadhi, rajma, or dal makhani, with rice, salad, and chaas or lassi—brings me comfort and keeps me feeling nourished. It's the perfect balance of taste and nutrition.

Oh, I have a massive sweet tooth! My favorites are gooey chocolate brownies and thick, warm cookies. I love indulging in anything that's warm, chocolatey, and comforting—especially after meals.

What's the best food advice you've received, and from whom?

The best food advice I got was from Chef Ranveer Brar. He told me that learning never stops for a chef, no matter your age or experience. You should always be open to learning from anyone—whether they're younger, less experienced, or come from a different culinary background. That's how you keep growing as a chef, and it's something I always keep in mind.
