Navratri is a time for fasting, but that doesn't mean you have to compromise on taste! Khaaja Sim Sim brings you a special vrat-friendly recipe: Sabudana Paratha with Aloo Subji— perfect for those looking to enjoy delicious and wholesome meals during the fast, or even beyond!

Ingredients:

For Sabudana Paratha:

  • Sago (Sabudana) – 1 cup (roasted & powdered)
  • Black pepper powder – ½ tsp
  • Salt – ½ tsp
  • Green chillies – 2 (chopped)
  • Ginger – 1 inch (grated)
  • Peanut powder – 2 tbsp
  • Chopped coriander – 2 tbsp
  • Boiled & grated potatoes – 2 medium-sized
  • Water – As required (for dough)
  • Clarified butter (ghee) – For applying on parathas

For Aloo Subji:

  • Clarified butter (ghee) – 1 tsp
  • Cumin seeds (jeera) – 1 tsp
  • Ginger – ½ inch (chopped)
  • Green chillies – 2 (chopped)
  • Boiled & mashed potatoes – 2 large
  • Peanut powder – 2 tsp
  • Water – 2 cups
  • Curd – ½ cup
  • Sabudana powder – 1 tsp
  • Salt – 1 tsp
  • Black pepper powder – ½ tsp
  • Chopped coriander – 2 tbsp (for garnish)

Method:

Prepare Sabudana Powder:

  • Dry roast sabudana for 5 minutes, let it cool, then grind it into a powder.
  • Sieve the powder and transfer it to a bowl.

Make Dough for Paratha:

  • Add black pepper, salt, green chilies, grated ginger, peanut powder, chopped coriander, and grated potatoes to the sabudana powder.
  • Mix with water to form a soft dough.

Prepare Aloo Subji:

  • Heat ghee in a pan, add cumin seeds, ginger, and green chillies.
  • Add mashed potatoes, peanut powder, and 1 cup of water, and bring to a boil.
  • Stir in sabudana powder, curd, 1 more cup of water, salt, and black pepper.
  • Garnish with coriander leaves.

Roll the dough into flat parathas and cook on a pan, applying ghee until golden brown.
