4 elaichi, 1 badi elaichi, 10 cloves, 1 star anise, 5 bay leaves, 1 tbsp peppercorn, 1-inch cinnamon, and 15-20 kesar strands.
Other Essentials:
3 tbsp ghee, 1 cup jaggery, and silver vark for garnish.
Step-by-Step Recipe for Amlaprash
Preparation:
Steam 500 gms of amla for 15–20 minutes until tender.
Dry roast the cinnamon, elaichi, badi elaichi, cloves, star anise, peppercorn, and bay leaves. Cool and grind into a smooth powder.
Blend raisins, dates, ginger, and tulsi leaves with a little water. Keep aside.
Deseed the steamed amla and blend it into a smooth paste.
Cooking:
Heat ghee in an iron pan and sauté the amla paste for 4–5 minutes.
Add jaggery and cook for 2 minutes until it melts.
Stir in the date-tulsi paste, ground spices, and kesar strands.
Cook on low heat until the mixture thickens and changes color.
Storage:
Garnish with silver vark and additional kesar. Store in an airtight container for up to 6 months.
