Here's a straightforward recipe to make this tasty treat shared by Nehal Karkera. The key to a great Prawn Ghee Roast is cooking the masala slowly and thoroughly. It takes about 20-30 minutes to get that perfect flavor.
Prawn Ghee Roast Recipe
Ingredients
For Marination:
- 500 gm Prawns, cleaned and deveined
- ½ tsp Turmeric powder
- 3 tbsp Yogurt (optional)
- 2 tsp Salt
- Juice of 1 Lemon
For the Masala:
- 8 Dried Kashmiri Chilies
- 7-8 Bedige Chillies
- 1 tbsp Black Peppercorns
- 1 tbsp Coriander Seeds
- 1 tbsp Cumin Seeds
- 5-6 Cloves
- ¼ tsp Fenugreek Seeds
- 10-12 Garlic Cloves
- 1 small piece Ginger
- 1 medium Onion, chopped
- 1½ tbsp Tamarind Paste
- ¼ cup Water (for grinding)
Other Ingredients:
- 4-5 tbsp Ghee
- 7-8 Curry Leaves
- 1 tbsp Chicken Seasoning Cube, crumbled (optional)
- Salt to taste
- ½ cup Water
Recipe
Get the Prawns Ready:
- Mix prawns with turmeric yogurt (if you're using it), salt, and lemon juice. Stir well and marinate for 30 minutes.
Make the Masala:
- Toast Kashmiri and Bedige chilies black pepper, coriander seeds, cumin seeds, cloves, and fenugreek seeds in a dry pan until you smell their aroma. Set aside to cool down.
- Mix roasted spices with garlic, ginger, onion, tamarind paste, and ¼ cup water to make a smooth paste.
Cook the Masala:
- Heat ghee in a pan. Add curry leaves and wait for them to pop.
- Put masala paste in and cook on medium heat stirring now and then, until oil separates, for about 15-20 minutes.
- If you like, add crumbled chicken seasoning cube, salt to taste, and ½ cup water. Cook until the masala gets thick.
Cook the Prawns:
- Add marinated prawns to the masala. Cook for about 5 minutes until prawns are ready. Take care not to cook them too long.
- Once prawns cook and ghee rises to the surface, switch off the heat.
Serve:
- Serve hot, with fresh curry leaves as a garnish. Pair with dosas or steamed rice.
