Here's a straightforward recipe to make this tasty treat shared by Nehal Karkera. The key to a great Prawn Ghee Roast is cooking the masala slowly and thoroughly. It takes about 20-30 minutes to get that perfect flavor.

Prawn Ghee Roast Recipe

Ingredients

For Marination:

  • 500 gm Prawns, cleaned and deveined
  • ½ tsp Turmeric powder
  • 3 tbsp Yogurt (optional)
  • 2 tsp Salt
  • Juice of 1 Lemon

For the Masala:

  • 8 Dried Kashmiri Chilies
  • 7-8 Bedige Chillies
  • 1 tbsp Black Peppercorns
  • 1 tbsp Coriander Seeds
  • 1 tbsp Cumin Seeds
  • 5-6 Cloves
  • ¼ tsp Fenugreek Seeds
  • 10-12 Garlic Cloves
  • 1 small piece Ginger
  • 1 medium Onion, chopped
  • 1½ tbsp Tamarind Paste
  • ¼ cup Water (for grinding)

Other Ingredients:

  • 4-5 tbsp Ghee
  • 7-8 Curry Leaves
  • 1 tbsp Chicken Seasoning Cube, crumbled (optional)
  • Salt to taste
  • ½ cup Water

Recipe

Get the Prawns Ready:

  • Mix prawns with turmeric yogurt (if you're using it), salt, and lemon juice. Stir well and marinate for 30 minutes.

Make the Masala:

  • Toast Kashmiri and Bedige chilies black pepper, coriander seeds, cumin seeds, cloves, and fenugreek seeds in a dry pan until you smell their aroma. Set aside to cool down.
  • Mix roasted spices with garlic, ginger, onion, tamarind paste, and ¼ cup water to make a smooth paste.

Cook the Masala:

  • Heat ghee in a pan. Add curry leaves and wait for them to pop.
  • Put masala paste in and cook on medium heat stirring now and then, until oil separates, for about 15-20 minutes.
  • If you like, add crumbled chicken seasoning cube, salt to taste, and ½ cup water. Cook until the masala gets thick.

Cook the Prawns:

  • Add marinated prawns to the masala. Cook for about 5 minutes until prawns are ready. Take care not to cook them too long.
  • Once prawns cook and ghee rises to the surface, switch off the heat.

Serve:

  • Serve hot, with fresh curry leaves as a garnish. Pair with dosas or steamed rice.
