Holi Special: Eggless Rainbow Marble Cake by Aruna Vijay!

Baking at home always takes Aruna Vijay down memory lane. She grew up savoring simple homemade cakes, the same kind her mother used to make with so much love. Now, when she bakes for her kids, she loves to add a splash of color and a touch of nostalgia—especially around the Holi festival. And what's a better way to celebrate the festival of colors than with a vibrant Rainbow Marble Cake?
This eggless cake is super moist. What is the secret ingredient? Just a little vinegar, as it perfectly transforms the whole texture! Don't worry if you're new to baking; this one's super easy, fuss-free, and oh-so-festive!
Rainbow Marble Cake (Eggless)-
Ingredients:
- 1 cup of maida (all-purpose flour)
- 1/2 cup of powdered sugar
- 1/4 cup of oil
- 1/2 cup milk
- 1 tbsp vinegar
- 1 tsp of baking powder
- 1/2 tsp baking soda
- 1 tsp of vanilla essence
- Food colors (any 4 of your choice)
Method-
- In a bowl, mix milk, oil, and vanilla essence until it is smooth.
- Add powdered sugar, baking powder, baking soda, and maida to the wet mix. Gently fold until it's just combined, but don't overmix!
- Add vinegar right at the end and give it one other final mix. This step makes the cake extra moist.
- Divide the batter into five equal parts, keep one plain, and add your chosen food colors to the other four.
- Line in a loaf tin with a parchment paper. Layer the batters one by one, starting with the plain.
- Use a skewer or toothpick to create some gentle swirls for that beautiful marble effect.
- Preheat a pressure cooker with some salt at the base. Place a stand inside, remove the gasket and whistle, and bake on a low-medium flame for 35–40 minutes, or until a skewer comes out all clean.
