Ingredients:
For the Sev Burfi:
- 1/2cup unsalted sev
- 1/2 cup mawa
- 1/3 cup sugar
- 1/4 cup milk
- pista, rose petals and silver warq for garnish
For the sugar syrup:
- 1/2 cup sugar
- 1/4 cup water
For the cigar rolls:
- 5 spring roll sheets
- Ghee for brushing
- Maida slurry
Recipe
Make the Sev Barfi:
- Begin by boiling the milk and sugar in a pan.
- When it's heated, add the mawa and mash it thoroughly.
- Add a pinch of cardamom (ilaichi) and saffron (kesar) for taste.
- Allow the mixture to boil.
- Then add the unsalted sev and combine everything.
- Finish with a bit more mawa and some ghee. Cover the pan and let it sit for 5-10 minutes. Your Sev Barfi is now ready.
- Prior to serving, garnish with nuts and rose petals.
Prepare the Cigar Rolls:
- Take the Sev Barfi mixture and stuff it into the spring roll sheets.
- Roll them up tightly and brush with ghee.
- Use the maida slurry to seal the edges.
- Air fry the rolls until they are crispy and golden.
Serve:
- Drizzle some sugar syrup over the crispy cigar rolls and garnish with nuts.
