Chef Aasthi recently stunned her followers with a unique culinary revelation on Instagram. See how she turns jowar seeds into tasty, nutrient-dense laddoos that are suitable for everyone as a nutritious snack. Popping jowar seeds to make hearty laddoos that completely rethink what constitutes a nutritious snack.
The method produces amazing results while being surprisingly easy to follow. Jowar seeds are ready to explode after they are soaked in boiling water for five minutes and then completely dried, according to Chef Aasthi.
These popped jowar seeds are combined by Chef Aasthi with a well-balanced mixture of dates, nut butter, sunflower seeds, and pumpkin seeds to create wholesome laddoos that are as tasty as they are healthy.
Rich in fibre, protein, and good fats, they provide a nutritious snack choice that can be enjoyed at any time of day. These laddoos deliver long-lasting energy and satisfaction without sacrificing flavour, making them perfect for any time of the day.
Ingredients:
- 2 Cups Popped Jowar
- 1 Cup Soft Dates pitted- I've used about 15
- 1/4 cup nut butter (I've used almond)
- 2 tablespoon pumpkin seeds lightly toasted on pan
- 2 tbsp sunflower seeds-lightly toasted on pan
- 1 tablespoon flax seed powder
- pinch of salt
Procedure:
- Toast the sunflower seeds and pumpkin seeds in a dry pan on medium heat until they are golden brown. Take them out
- Add 1 cup of jowar seeds to boiling water. Switch off the flame and let the jowar seeds sit in the boiling water for 5 mins. Drain thoroughly.
- Dry on a cloth for a few hours until completely dry.
- Take a heavy bottom pan and heat it. The right temperature is when you add a splash of water and it forms into little balls.
- Take about 3 tbsp of jowar seeds and start popping them in a pan. The pan shouldn't be too hot or it will burn. Once you add the seeds use a wooden spatula (I've added a cloth so it doesn't mash the popped seeds.) Once you hear it pop increase the heat to medium-high and add a piece of parchment paper to stop the seeds from spluttering all over. Make sure to keep mixing it really fast so the seeds don't burn. Once you hear the popping sound reduce, you can remove the popped seeds and add another batch.
- Continue until you have about 2 cups of popped jowar. This should take about 3-4 times. Initially, you might burn a few until you get the hang of it.
- In a food processor, add pitted dates, nut butter, a pinch of salt, and flax seed powder. Blend until you get a soft dough.
- In a large bowl add the date mixture, popped jowar seeds, pumpkin seeds, and sunflower seeds.
- Now use your hands to mix this really well. You might think that it will never mix but just be patient. It takes time for the date mixture to get incorporated fully.
- Roll into balls and your laddoos are ready. Refrigerate for 10 days!
