If you're tired of your regular soya chunk dishes, this soft soya kheema with crunchy vegetables is a great alternative! It's a nutritious and fulfilling dinner that may be eaten on its own or with rice. This dish, shared by food influencer Adhya S, is simple to prepare and full of flavor.

Ingredients

  • 1 cup soya chunks
  • 2 cups veggies of your choice (onion, bell peppers, broccoli, mushrooms)
  • 4 garlic cloves
  • 1 tsp chilli powder
  • 1 tsp coriander powder
  • 1/4 tsp turmeric
  • Salt to taste
  • 1 tsp soya sauce/tamari/coconut aminos
  • 1 tsp coriander leaves (optional)

Instructions

  • Start by boiling the soya chunks in hot water for a few minutes. Once they are soft, squeeze out the excess water.
  • Blend the softened soya chunks with garlic and all the spices until you get a kheema-like texture. Heat a pan and sauté this mixture for a few minutes. Then, set it aside.
  • In the same pan, sauté your choice of vegetables until crispy. You can change the vegetables according to what you have available.
  • Add a slurry made with Ragi flour and soy sauce to the pan. Once the sauce thickens, mix in the cooked soya kheema. Sauté everything together on high heat for a couple of minutes.
  • Serve hot soya kheema with steamed rice. If you want to, put some coriander leaves on top for added taste.
