Ingredients:
For the Sweet Potato:
- 2 sweet potatoes
- Olive oil (for brushing)
For the Veggie Mix:
- 2 tsp olive oil
- 1 tbsp garlic (chopped)
- 1 onion (diced)
- 1 yellow bell pepper (diced)
- A few mushrooms (diced)
- 1/2 zucchini (diced)
- 1/2 eggplant (diced)
- 1/2 broccoli (diced)
- 1/2 tsp garlic seasoning
- 1/2 tsp dried herbs
- 3 tomatoes (blanched and puréed)
- Salt, a pinch of sugar, and crushed black pepper (to taste)
- Fresh basil leaves (torn)
For the Yogurt-Cheese Mix:
- 1/4 cup yogurt
- 2 tbsp cream cheese
- 1 tbsp jalapeño (chopped)
- 1 tbsp gherkins (chopped)
- 1 tbsp dill leaves (chopped)
- Salt and crushed black pepper (to taste)
For the Final Touch:
- 1 1/2 tbsp butter
- 2 tbsp mozzarella cheese
- Salt and crushed black pepper (to taste)
- Black olives and parsley (for garnish)
Instructions:
- Cook the Sweet Potatoes: Start by poking them with a fork and brushing them with olive oil. Air-fried them for 45 minutes at 150°C (300°F) until tender.
- Prepare the Veggies: Heat olive oil in a pan and sauté garlic and onion until soft. Add the diced bell pepper, mushrooms, zucchini, eggplant, and broccoli. Season with garlic seasoning and dried herbs. Stir in the blanched and puréed tomatoes, season with salt, sugar, and black pepper. Finish with fresh basil.
- Make the Yogurt-Cheese Mix: Combine yogurt, cream cheese, jalapeño, gherkin, and dill in a bowl. Season with salt and pepper.
- Assemble the Kumpir: Slice the sweet potatoes in half. Add butter and mozzarella cheese, season with salt and pepper, and mash. Top with the veggie mix and the yogurt-cheese sauce.
- Serve: Garnish with black olives and parsley.
