- ½ tbsp Coriander & Jeera, crushed
- ¼ cup Besan (Gram Flour)
- 4 tbsp Water
- Salt, to taste
For the Tadka:
- 1 tbsp Ghee
- ½ tsp Jeera (Cumin)
- ½ tsp Mustard Seeds
- A pinch of Hing (Asafoetida)
- 1-inch Ginger, julienne
- 2 Dried Red Chilies
- 1 tsp Red Chili Powder
How to Make Makki Ki Kadhi
Step 1: Prepare the Kadhi Base:
Mix makki atta, makki dalia, grated ginger, and dahi in a bowl. Add water, salt, red chili powder, turmeric powder, and cumin to the mixture. Pour the mix into a kadhai and stir continuously while bringing it to a boil.
Step 2: Make the Pakodas
In a bowl, combine spinach, onion, corn, ajwain, turmeric powder, coriander, cumin, besan, water, and salt. Ensure the batter is thick. Heat oil and drop dollops of the pakoda mixture into the hot oil. Fry until golden brown and crisp (GBC).
Step 3: Smoke the Kadhi
