Ingredients for Mushroom Bean Falafel
- 200g Mushrooms
- 1/2 Onion
- 1 cup Kidney beans (cooked and mashed)
- 100g Paneer
- 1.5 tbsp Ginger-garlic paste
- 1 tsp Cumin powder
- Salt to taste
- Pepper to taste
- 3 tbsp Breadcrumbs
- 3 tbsp Fresh coriander, chopped
- Oil for cooking

- 1 small Onion
- 1 Tomato
- 2 tbsp Lime juice
- 2 tbsp Orange juice
- Salt to taste
- Pepper to taste
- Zest of 1 Orange
Ingredients for Green Chilli Garlic Dip
- 1/2 cup Hung curd
- 2 tbsp Fresh cream
- 2 tsp Garlic-chilli paste
- Salt to taste
- Pepper to taste
Preparing the Mushroom Bean Falafel
To prepare the Mushroom Bean Falafel, begin by finely chopping the mushrooms and onions. Soak kidney beans overnight and cook them in a pressure cooker until they are tender, usually for about 7-8 whistles. Next, sauté the mushrooms in oil until they turn golden brown, then add the chopped onions and sauté until they become translucent. Remove the mixture from the heat and stir in ginger-garlic paste, cumin powder, salt, and pepper. In a mixing bowl, combine crumbled paneer, mashed kidney beans, the sautéed mushroom-onion mixture, breadcrumbs, and chopped coriander. Shape this mixture into tight balls and air fry them at 200°C for 20 minutes until they turn golden brown.
Making the Orange Salsa
For the Orange Salsa, finely chop the onions and tomatoes. In a bowl, mix the onions and tomatoes with lime juice, orange juice, salt, pepper, and a touch of orange zest to create a tangy salsa.
Creating the Green Chilli Garlic Dip
To make the Green Chilli Garlic Dip, combine hung curd, fresh cream, garlic-chilli paste, salt, and pepper in a bowl, stirring until smooth.
