- 1 1/2 tsp Salt
- 1/2 tsp Turmeric
- Juice of 1/2 Lemon

- 1 1/2 tbsp Butter
- 1 tbsp Oil
- 2 medium Onions, chopped
- 1 1/2 tbsp Garlic, chopped
- 1 tbsp Ginger, chopped
- Salt, to taste
- 1 tsp Garam Masala
- 1/4 tsp Turmeric Powder
- 1 tsp Coriander Powder
- 2 1/2 tsp Kashmiri Chilli Powder
- 3 medium Tomatoes, chopped
- 2-3 Green Chillies, chopped
- 1/2 cup Water

- 1-2 tbsp Chopped Coriander
- 2 tsp Butter
Method: Step-by-Step Guide to Making Chicken Masala Fry
Marinate the Chicken:
Begin by marinating the cleaned and washed chicken with salt, turmeric, and lemon juice. Allow the chicken to marinate for 20 minutes, letting the flavors infuse.
Prepare the Masala Base:
Heat oil and butter in a large pan or kadai. Add chopped onions, garlic, and ginger with a pinch of salt. Fry the mixture on medium heat for about 4-5 minutes, until the onions begin to brown at the edges.
Add the Spices:
Reduce the heat to low and add garam masala, turmeric powder, coriander powder, and Kashmiri chilli powder. Fry the spices for about 2 minutes, making sure not to burn them. If the mixture starts sticking, add a splash of water to prevent burning.
Incorporate the Tomatoes and Chillies:
Add the chopped tomatoes and green chillies to the pan, stirring briefly. Add 1/2 cup of water, cover the pan, and cook on medium-low heat for 4-5 minutes until the tomatoes soften and the oil begins to separate from the masala.
Cook the Chicken:
Now, add the marinated chicken to the pan. Stir-fry on medium heat for about 2 minutes. Lower the heat to medium-low, cover, and let the chicken cook for 8-10 minutes. The chicken will release water during this time; once done, remove the lid and allow the water to evaporate completely.
Thicken the Masala:
Once the water has evaporated, continue to stir-fry the chicken until the masala thickens and coats the chicken evenly. Add freshly chopped coriander and finish with a little extra butter for a rich, flavorful touch.
