Desi Macaroni Soup Ingredients:
For Soup Puree:
- Olive oil – 1 tbsp
- Garlic cloves, chopped – 5
- Medium onions, chopped – 2
- Tomatoes, chopped – 6
- Medium potatoes, chopped – 2
- Salt – as needed
- Pepper – 1 tsp
- Sugar – 1 tsp
- Water – ½ cup
- Basil leaves – 10-12
For Veggies Frying:
- Olive oil – ½ tbsp
- Carrot, finely chopped – ¼ cup
- Beans, finely chopped – ¼ cup
- Zucchini, finely chopped – ¼ cup
- Baby corn, finely chopped – ¼ cup
- Chili flakes – 1 tsp
- Oregano – 1 tsp
- Salt – as needed
- Black pepper powder – ½ tsp
- Boiled macaroni – ¾ cup
- Fresh coriander – for garnish
Method To Prepare Desi Macaroni Soup
Step 1: Making the Soup Puree
Sauté garlic and onion in olive oil inside a pressure cooker. Then add tomatoes, potatoes, pepper, sugar, salt and water. Pressure cook for two whistles. After releasing pressure, add basil leaves and blend until smooth.
Step 2: Cooking Veggies
Heat olive oil separately in a pan. Quickly sauté the chopped veggies (carrot, beans, zucchini, baby corn) without overcooking them. Add chili flakes, oregano, salt, and pepper.
Step 3: Combine Soup & Macaroni
Mix the pureed soup with sautéed veggies. Add boiled macaroni, sprinkle fresh coriander on top, and gently simmer briefly to combine flavors.
