Every Navratri, our home buzzes with excitement as we try out different fasting recipes. One dish that has become a family favorite is the Sweet Potato and Paneer Skewers, recently shared by food influencer Nidhi Bothra. They are not only quick to make but also a delicious way to enjoy the fasting period. While Sabu dana is a classic choice, these skewers offer a tasty twist that fills you up and provides a good source of protein.

Ingredients

Skewers:

  • 2-3 large sweet potatoes boiled and cubed
  • 8-10 cubes paneer , qual to the size of your potato cubes

Marinade:

  • 2 tbsp peanut oil, or ghee
  • 1 tsp roasted cumin powder
  • 1 tsp mango powder (amchur)
  • 1 tsp salt
  • 1/2 tsp black pepper

Accompaniments:

  • 1 1/2 cups yogurt, mixed with 2 tsp sugar and 1 tsp salt
  • 1/4 cup mint cilantro chutney

Garnishes:

  • Dried mint
  • Roasted cumin powder
  • Salt
  • Green chilies, finely chopped
  • Mixed nuts, finely chopped
  • Pomegranate seeds

How to Make?

  • Prepare the Ingredients: First, chop the boiled sweet potatoes and paneer into equal-sized cubes. Soak wooden skewers in water to avoid burning.
  • Make Marinade: Mix 2 tbsp peanut oil or ghee, 1 teaspoon roasted cumin powder, 1 teaspoon mango powder, 1 tsp salt and half a teaspoon black pepper in a bowl. The flavor of our skewers is going to be fantastic from this mixture.
  • Assemble the Skewers: Place the prepared cube of the sweet potato and paneer over the soaked skewers.
  • Cook Skewers: Toss some oil on the griddle, put the skewers, brush them with marinade on each side, and let them cook until perfectly turning to golden brown.

For Serving:

  • To serve these skewers, you could take a plate, smear some sweet and tangy yogurt and mint-cilantro chutney on it, and position these skewers on top. Sprinkle some dry mint, roasted cumin powder, a pinch of salt, chopped green chilies, mixed nuts, and pomegranate seeds on top. This makes it very flavorful and attractive to the eye too.
