One-Pot Mysore Pak Recipe

Ingredients

  • Toasted Besan: 1 cup
  • Milk Powder: 1 tbsp
  • Sugar: 3/4 cup (1/2 cup + 1/4 cup)
  • Water: 1/4 cup
  • Ghee: 3 tbsp + 1/4 cup

Method

  • Toast the gram flour: In a pan, toast the chana flour (besan) on medium heat till golden brown and nicely fragrant. Be careful not to burn.
  • Prepare the mixture: Once toasted, unwrap the base to remove any lumps. Mix in the milk powder and set aside.
  • Make the sugar syrup: In a pressure cooker, add sugar, water, and 3 tablespoons of butter. Mix until the sugar begins to dissolve.
  • Cook the syrup: Close the lid and pressure cook on medium heat for 3 minutes. Don't worry about the whistles; it's just time!
  • Assemble the ingredients: Dip the toasted bases in the sugar syrup. Mix well together. Next, melt the remaining 1/4 cup of butter in two tablespoons at a time. Mix until the mixture thickens and the butter is fully incorporated.
  • Set and Cut: Pour the mixture into a greased tin and set. While hot, cut to your liking.

Tips for Perfect Mysore Cooking

  • Toast over low heat to prevent burning.
  • Always sift the besan while toasting.
  • Be precise when making the sugar syrup: cook for exactly 3 minutes, and immediately release the pressure.
  • Add the besan and ghee and give it a quick simmer to mix everything well.
