Ingredients:

  • Oil - 1 Tbsp
  • Ginger - 1 Tbsp
  • Garlic - 1 Tbsp
  • Coriander stem - 1 Tbsp, finely chopped
  • Onion - 1/4 cup, finely chopped
  • Soy Sauce - 1 Tsp
  • Sriracha - 2-3 Tbsp
  • Rice Vinegar - 1 Tsp
  • Salt - 1 Tsp
  • Pepper - 1/2 Tsp
  • Chilli flakes - 1/2 tsp
  • Noodles - 1 cup
  • Water - 2.5 cups
  • Carrot - 1/4 Cup
  • Broccoli florets - 1/4 cup
  • Corn - 2 tbsp
  • Tofu - 1/4 cup, cubes
  • Spring onion greens - a little, finely chopped
  • Black and white sesame seeds for garnish
  • Chilli oil - 1 tsp

Method

  • In a pressure cooker, heat the oil over medium heat. Add the minced ginger, garlic, coriander stems, and chopped onion. Sauté until the onion becomes soft.
  • Next, stir in the soy sauce, sriracha, rice vinegar, chili flakes, pepper, and salt. Then add the water.
  • Add the noodles to the pot and close the lid. Cook for about one whistle on high heat.
  • Once the pressure is released, check the consistency of the soup and adjust with more water if needed. Add the carrot, broccoli, corn, and tofu. Cook it to a boil.
  • Pour the soup into bowls. Garnish with chopped spring onion greens, sesame seeds, and a drizzle of chilli oil if you like it spicy. And Enjoy!
