This fermented dish combines both prebiotics (like onion and fiber-rich rice) and probiotics (from curd and fermented rice) to create a soothing, nourishing, and gut-friendly meal.

Rice kanji is a gut superfood that also help lower body inflammation, that helps reduce acne, supports weight loss, and give your healthy-looking skin.

Ingredients You'll Need

  • 1 cup cooked rice
  • 3/4 cup water
  • Salt to taste
  • 3/4 cup yoghurt
  • 1 chopped onion
  • 1 chopped green chilli

For Tempering

  • Mustard oil
  • A pinch of heeng (asafoetida)
  • 1 tsp mustard seeds
  • 10 curry leaves
  • 1/2 tsp jeera (cumin seeds)

How to Make It

  • Soak the cooked rice in water and let it ferment for 8–10 hours.
  • Mix in chopped onion, green chilli, yoghurt, and salt.
  • Prepare the tempering with mustard oil, heeng, mustard seeds, curry leaves, and jeera.
  • Add the tempering to the rice mixture, stir well, and enjoy!
