4–5 peppercorns
2 cloves
2 cardamom pods

1 chopped green chili
Grated ginger
1.5 tbsp Dum Aloo masala
½ tsp amchur (dry mango powder)
½ cup hot water

Step-by-Step Recipe for Allahabadi Dum Aloo Masala
- Prepare the Masala: Roast coriander seeds, cumin seeds, dried red chilies, peppercorns, cloves, and cardamom pods in a pan until aromatic. Let the mixture cool, then blend or pound it into a fine powder. Set aside.
