Akshada Desai Lobo's Quick and Easy One-Pot Pav Bhaji Recipe

Pav Bhaji is a popular street meal that is best enjoyed on a cold winter day. Akshada Desai Lobo, a food influencer, offered this quick and easy recipe for One Pot Pav Bhaji. It is likely to save you time while providing you with a delicious meal in no time!
Ingredients:
- 2 tbsp oil
- 2 tbsp butter
- 1/2 tbsp ginger, chopped
- 1 to 2 tbsp garlic, chopped
- 1 tsp cumin seeds (jeera)
- 2 large or 3 medium onions, chopped
- 1 green chili, chopped
- 2 tomatoes, chopped
- 1 small bell pepper, chopped
- 2 potatoes, chopped
- 1/2 cup cauliflower florets
- 1/3 to 1/2 cup peas (frozen peas work great)
- 1/4 cup carrot, chopped
- 1/4 to 1/2 cup beetroot, chopped
- Salt to taste
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1/2 tbsp coriander powder
- 1 to 2 tbsp pav bhaji masala
- Fresh coriander leaves for garnish
- Hot water
- Finely chopped onions, coriander leaves, and lemon wedges for serving
Instructions
- Heat 2 tbsp oil and 2 tbsp butter in a large pan.
- Add 1/2 tbsp chopped ginger, 1 to 2 tbsp chopped garlic, and 1 tsp cumin seeds. Fry them for a minute until they release a nice aroma.
- Put in the chopped onions and the green chutney into that pan. Now fry, stirring occasionally till those onions soften well and brown in color.
- Salt in, add turmeric powder as well as the red chili powder mix.
- Add all your chopped veggies of potatoes, carrots, beetroot, peas, and cauliflower, and then tomatoes and green bell peppers. Shake them gently now
- Throw into it 1/2 tbsp of the coriander powder and 1 or 2 tablespoons of Pav Bhaji masala. Get everything coated.
- Add some hot water and cover the pan. Let the vegetables cook for about 1 to 2 whistles (if using a pressure cooker) or until they become soft.
- Once cooked, mash the vegetables using a masher. Make sure everything is well mashed and mixed together.
- Garnish with fresh coriander leaves.
- Serve your one-pot Pav Bhaji with finely chopped onions, fresh coriander leaves, and a wedge of lemon on the side. Pair it with buttered pav (bread rolls) for the perfect winter treat!
