Ingredients:

  • 150g paneer (cottage cheese)
  • 4-5 green chillies (add more if you love spice)
  • 8-10 garlic cloves
  • 2-3 tbsp peanuts
  • 1 cup coriander leaves with stems
  • Salt to taste

Method:

  • Prepare Thecha: Start by dry roasting garlic cloves, green peppers and peanuts in a pan. Fry until light brown. Add the coriander leaves towards the end and cook everything for about 30 seconds. Once roasted, add the mixture to a mortar and pestle and blend to a paste-like consistency. If desired, you can also blend in a mixing bowl. Add salt to taste.
  • Coat the Paneer: Cut the cheese into small pieces and coat each with the spicy thecha paste.
  • Easy frying: Heat some oil in a frying pan and shallow fry the cheese cubes on all sides until golden and crispy.
  • Enjoy Serving: Serve the paneer thecha with some chopped onions and lemon zest. The freshness of the onions and the sharpness of the lemon perfectly balance the spice.
