Ingredients for the Soya Cutlet:

  • 1 cup soya chunks
  • 4-5 garlic cloves
  • 2-3 green chilies
  • 1 inch ginger
  • 1.5 tsp chili powder
  • 1/2 tsp turmeric powder
  • 1 tbsp coriander powder
  • 1 tsp garam masala
  • Salt to taste
  • 1 large onion (chopped)
  • 2 tbsp coriander leaves
  • 2 tbsp besan (chickpea flour)
  • 3/4 cup sweet potato (boiled)

For the Salad:

  • 2-3 tbsp thick curd or yogurt
  • 1 tsp chili flakes
  • Salt to taste
  • Mint chutney (optional)
  • 1.5 cups chopped cucumber, lettuce, and tomatoes

Instructions

  • Start by adding soya chunks to boiling water and letting them cook for 5 minutes.
  • Once they are soft, drain the water and transfer them to a mixer.
  • Add ginger, garlic, green chilies, and all the spices to it.
  • Grind it into a coarse paste.
  • Transfer this paste to a bowl and mix in the chopped onions and coriander leaves. If you like, add 2 tablespoons of besan for extra binding.
  • Shape this mixture into cutlets and shallow fry till golden brown.

To make the salad, combine thick curd or yogurt, chili flakes, and salt. Combine the chopped cucumber, lettuce, and tomatoes with the dressing and mix completely. For an extra flavor boost, add mint chutney.

Serve the crispy soya cutlets beside the refreshing salad for a healthy and pleasant meal!
