- 3 Green chillies (big)
- 7-8 Ginger juliennes
For Tempering:
- 3-4 tbsp Mustard oil
1/2 tbsp each of:
- Cumin seeds

- Kalonji (Nigella seeds)
- Saunf (Fennel seeds)
For Spices:
- 1/2 tsp Turmeric powder
- 1 tsp Coriander powder
- 1 tsp Red chilli powder
- Salt to taste
- 3-4 tbsp Jaggery powder
- A pinch of Hing (Asafoetida)
Step-by-Step Method to Prepare Achari Amla
Step 1: Prepare the Amla and Vegetables
- Make vertical cuts in the amla and steam them for 8-9 minutes. Chop the green chilies and ginger juliennes. Once steamed, separate the amla slices from the seeds and set them aside.
Step 2: Prepare the Tempering
- Heat mustard oil in a kadhai. Add hing, followed by mustard seeds, cumin seeds, nigella seeds, fennel seeds, and saunf. Allow them to splutter.
Step 3: Cook the Amla and Spices
- Add the chopped green chilies, ginger, and steamed amla to the tempering. Sauté for a minute. Add turmeric powder, coriander powder, red chili powder, and salt to taste. Cook for 4-5 minutes, ensuring the spices coat the amla evenly.
Step 4: Sweeten with Jaggery
- Add jaggery powder to the mix and stir well until it melts and blends with the spices.
