Food has a unique ability to remind us of our loved ones. Food influencer Saransh Goila recently shared a recipe that reminds him of his first food inspiration, his grandfather. Buniya wale aloo is a delicious aloo curry that works well with Nagori halwa and puri.

Ingredients

  • 1 tbsp Ghee
  • 1/2 tsp Jeera (cumin seeds)
  • 1/2 tsp Saunf (fennel seeds)
  • 1/2 inch Ginger, chopped
  • 2 Green chilies, chopped
  • 1/4 tsp Hing (asafoetida)
  • 1/2 tsp Methi dana (fenugreek seeds), soaked
  • 1/4 tsp Haldi powder (turmeric)
  • 1 tsp Coriander powder
  • 1 tsp Red chili powder
  • 3 Boiled potatoes, crushed
  • 1/2 liter Water
  • 1 tsp Maida (refined flour)
  • 2 tbsp Water (for the maida)
  • 1/2 tsp Garam masala powder
  • Salt to taste

Instructions

Start Cooking:

  • In a pan, heat 1 tablespoon of ghee. Add jeera and saunf to sizzle.
  • Add the chopped ginger and green chilies. Sauté for a minute.

Add Spices:

  • Sprinkle with hing, soaking methi dana, haldi, coriander powder, and red chili powder.

Add Potatoes:

  • Crush the boiled potatoes and add them to the pan. Mix everything together.
  • Pour in 1/2 liter of water and mix well.

Thicken the Curry:

  • In a bowl, whisk together 1 teaspoon maida and 2 tablespoons water. Add this to the potato mix and stir.

Final Touch:

  • Add garam masala and salt. Mix well and cover. Cook for 10 minutes on low heat.

Prepare Tadka:

  • In another pan, heat ghee and add jeera, hing, and red chili for tadka. Pour this over the cooked potatoes and mix.

Serve:

  • Serve hot with Nagori halwa and puris for a complete meal.
